Showcasing the windward region of Oahu, these beans yield a warm base of graham cracker for subtle notes of tart cherry and floral honeysuckle to shine through.
A collection of beans from small-holdr farms across the Ko’olaupoko region (including those from Manoa’s mini chocolate farm in Waimanalo) are gathered, fermented, and dried together at Mapele Farms in Kahalu’u. Ben Field curates the selection and works directly with each farmer to ensure the cacao crops are healthy, happy, and full of life.
