The result was spectacular: the chocolate had become blonde-colored and released a delicate aroma of toasted shortbread and caramelized milk. Several years of research would then be necessary to reproduce this delicious experiment! The name Dulcey was then chosen to evoke the sweetness that characterizes this blonde-colored chocolate.
