What is bean-to-bar chocolate?

In the world of chocolate, bean-to-bar typically refers to the trade model indicating that one brand controls every stage of the product from the purchase of the beans to the production of the bar. Whereas chocolatiers melt pre-made chocolate to make chocolate confections, bean-to-bar makers source, clean, roast, crack, winnow, and grind the cacao beans themselves to form a chocolate bar. The companies producing bean-to-bar chocolate care first about quality, sustainability, and transparency. 

Why are bean-to-bar chocolate bars more expensive than mass produced bars?

We get asked this question quite a bit. The answer is simple, craft chocolate bars are made with some of the finest cocoa beans in the world, that were harvested by ethically paid farmers who use sustainable methods to bring you the best bean-to-bar chocolate. Bean-to-bar is not about mass production to maximize profit but rather sustainable production to maximize quality. The time, care and skill that went into these chocolates is not akin to what you will likely find in the grocery store. From carefully selecting and purchasing the best cacao beans for a particular chocolate profile, to roasting, grinding, refining, tempering and molding the bars, everything is a labor of love. One taste of a craft chocolate bar will have you convinced - after that very first bite you'll say: "Now I understand".
